Ingredients

  • 1 ripe banana (medium)
  • 2 eggs
  • 1 tbsp oat flour (or blended oats)
  • 1/2 tsp cinnamon
  • 1 tsp coconut oil for frying
  • Optional: berries or Greek yogurt for topping

Instructions

  1. Mash the banana in a bowl until smooth.
  2. Add eggs and oat flour. Mix until the batter becomes creamy.
  3. Heat coconut oil in a non-stick pan over medium heat.
  4. Pour small portions of batter to form pancakes.
  5. Cook 2–3 minutes per side until golden and set.
  6. Serve warm with berries or a spoon of Greek yogurt if desired.
