- 1 ripe banana (medium)
- 2 eggs
- 1 tbsp oat flour (or blended oats)
- 1/2 tsp cinnamon
- 1 tsp coconut oil for frying
- Optional: berries or Greek yogurt for topping
Instructions
- Mash the banana in a bowl until smooth.
- Add eggs and oat flour. Mix until the batter becomes creamy.
- Heat coconut oil in a non-stick pan over medium heat.
- Pour small portions of batter to form pancakes.
- Cook 2–3 minutes per side until golden and set.
- Serve warm with berries or a spoon of Greek yogurt if desired.
