Ingredients

  • 2 eggs
  • 1 tsp olive oil
  • 1 small whole wheat lavash (approx. 50g)
  • 1/2 cup fresh spinach (30g)
  • 30g feta cheese, crumbled
  • Salt & pepper to taste
  • Optional: pinch of oregano or chili flakes

Instructions

  1. Heat olive oil in a non-stick pan over medium heat.
  2. Add spinach and sauté for 1–2 minutes until wilted.
  3. Beat the eggs, season with salt and pepper, and pour them over the spinach.
  4. Cook until set, folding slightly for extra thickness if desired.
  5. Place the omelette in the center of the whole wheat lavash.
  6. Sprinkle with crumbled feta and optional spices.
  7. Roll into a wrap and serve warm.
