- 2 tbsp milk (plant or dairy)
- Pinch of salt
- 1 tsp olive oil (for the pan)
- 1 tbsp cream cheese (light)
- 40g smoked salmon
- Fresh dill or arugula for garnish
Instructions
- Mix oat flour, egg, milk, and salt into a smooth batter. Let rest for 5 minutes.
- Heat olive oil in a non-stick pan over medium heat.
- Pour the batter and swirl the pan to create a thin crêpe.
- Cook 2–3 minutes per side until lightly golden.
- Spread cream cheese on the warm crêpe.
- Top with smoked salmon and garnish with dill or arugula.
- Fold in half or roll. Serve warm or chilled.
