Ingredients

  • 3 tbsp oat flour (or ground oats)
  • 1 egg
  • 2 tbsp milk (plant or dairy)
  • Pinch of salt
  • 1 tsp olive oil (for the pan)
  • 1 tbsp cream cheese (light)
  • 40g smoked salmon
  • Fresh dill or arugula for garnish

Instructions

  1. Mix oat flour, egg, milk, and salt into a smooth batter. Let rest for 5 minutes.
  2. Heat olive oil in a non-stick pan over medium heat.
  3. Pour the batter and swirl the pan to create a thin crêpe.
  4. Cook 2–3 minutes per side until lightly golden.
  5. Spread cream cheese on the warm crêpe.
  6. Top with smoked salmon and garnish with dill or arugula.
  7. Fold in half or roll. Serve warm or chilled.
