Ingredients

  • 1 small sweet potato, diced
  • 1 egg
  • ½ red bell pepper, chopped
  • ¼ red onion, chopped

  • Salt, pepper, paprika to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced sweet potato and cook 6–8 minutes until softened.
